One of the standout dishes on Souk's menu is the 'Impossible Wrap', which I had the opportunity to try. As the name suggests, this wrap is quite extraordinary. It is not only delicious but also massive in size. The wrap starts with a generous spread of homemade hummus on a large flatbread. Then comes a colorful array of vegetables that easily fulfill your daily intake of greens. The best part is that you can customize the fillings according to your preferences, whether you prefer vegetables, meat, or vegan options. The staff at Souk are friendly and accommodating, ensuring a pleasant dining experience from start to finish.
The chicken and lamb used in the wrap are tenderized using a blend of 13 spices, including saffron, which gives them a tantalizing taste and tenderness. The meat is freshly cooked on a griddle and then generously added to the vegetable medley on the wrap. Edmond skillfully wraps the ingredients into a neatly packed cone shape. The wrap bursts with flavors and colors, thanks to the inclusion of crunchy pomegranate, salty olives, vibrant pink pickled turnips, gherkins, red cabbage, grated carrot, cucumber, courgette, and onion. The combination of textures and tastes is truly delightful.
Edmond mentioned that nobody manages to finish the entire wrap in one sitting. In fact, he often provides paper packaging for customers to take the remaining portion home. I personally could only eat half of the wrap and saved the rest for dinner. However, one customer mentioned that her son successfully devoured the entire wrap, and many others were attempting the same when I visited Souk. The Impossible Wrap is priced at £10 and offers a choice of saffron chicken, Moroccan lamb, vegan falafel, or plant-based meatballs as fillings. If you're in the mood for something different, Souk has several other enticing options on their menu.

Currently ranked number 22 out of 414 restaurants in Plymouth, the market stall has garnered a loyal following. Edmond shared that the Impossible Wrap has been a hit at various festivals across the UK, often attracting long queues. Additionally, Souk can be found at the Royal William Yard Good Food Market every month. Open every day except Sundays, Souk can accommodate around 20 people for dine-in and also offers a convenient takeaway service. The eatery is adorned with traditional Moroccan floral decorations, creating a cozy and inviting ambiance.
